Ever Frozen a Pickle?

I decided to try making cilantro freezer pickles.  At first I wondered why freezing the pickles was a good idea, then I realized it was the best way to preserve the fresh flavor of cilantro.  Lucky for me, a vendor at the farmers market was selling a half bushel of these cool snake like cucumbers.


 Using my ancient "Oster" I sliced the cucumbers as thin as I could.  Elijah Loves helping with the Oster.




I also sliced an onion in with the cukes.


Next I mixed 1 1/2 cups vinegar, 1 1/2 cups sugar, 1 tsp cumin.  I used a jar to shake it up and mix well.
 I then finely chopped 1/4 cup of cilantro



I then mixed it all together and moved it to a covered container and put it in the fridge overnight.




 Then I transferred it to some freezer bags, leaving some in a jar for the fridge because they are just so yummy!  These should be so fresh to eat in the winter.
